Properties

Cloves (Syzygium aromaticum) are the aromatic, dried, unopened flower buds of a tropical evergreen tree in the myrtle family. Known as "Laung" in Hindi, they have an intensely strong, pungent, warm, and sweet flavor. A single clove can dominate a dish, so they are used sparingly in Indian cooking, primarily in whole spice temperings (tadka), biryanis, and as a key component of Garam Masala.
