Clove leaves come from the same tree (Syzygium aromaticum) as the famous floral buds. While they are rarely used whole in culinary applications compared to bay leaves, they are a massive industrial source for extracting clove essential oil because they share the same primary compound, Eugenol. The leaves offer a more woody, less sweet aroma than the buds.
