Properties

Curry leaves (Murraya koenigii) are distinct from "curry powder" (a British spice blend). These fresh, aromatic leaves are a staple of South Indian and Sri Lankan cooking. When fried in hot oil or ghee during tadka (tempering), they release a complex, citrusy, nutty, and slightly pungent aroma. They are incredibly rich in iron and folic acid.
