Fennel seeds (Foeniculum vulgare), known as Saunf, are sweet, highly aromatic, and slightly licorice-flavored. They are a staple in Indian cooking and Ayurvedic practices. In North India, they are often used in pickles (achaar), Kashmiri curries, and as a key component of the Panch Phoron five-spice blend. Because of their cooling and digestive properties, roasted fennel seeds are famously chewed as an after-meal mouth freshener (Mukhwas).
