Dry Ginger, or Saunth (Zingiber officinale), is the dried, unpeeled, or partially peeled rhizome of the ginger plant. The drying process fundamentally alters its chemical composition—converting some gingerols into shogaols, which makes dry ginger more pungent, spicier, and warmer than fresh ginger. It is an essential component of Garam Masala and Chai Masala, imparting a deep, earthy heat without the watery, fibrous texture of the fresh root.
