Black Mustard (Brassica nigra), or Rai, is a tiny, dark reddish-brown to black seed with an incredibly sharp, pungent, and almost horseradish-like flavor. It is far more pungent than yellow or brown mustard. In South Indian cuisine, it is absolutely essential for tempering (tadka)—the seeds must be popped in hot oil to release their nutty, savory flavor; otherwise, they remain aggressively bitter.
