Brown or Red Mustard (Brassica juncea) sits between yellow and black mustard in terms of pungency. It is the most common variety used for extracting mustard oil and is frequently used interchangeably with black mustard in Indian tadkas (temperings) because it provides a similar sharp, peppery heat but is easier to cultivate and harvest mechanically than black mustard.
