Yellow Mustard (Sinapis alba or Brassica alba) is the mildest of the mustard seed family. Unlike the pungent, horseradish-like bite of black or brown mustard, yellow mustard is slightly sweet, tangy, and earthy. It is the primary ingredient in American yellow mustard condiments but is also used in Indian cooking (especially in Bengal) to create milder, creamier mustard pastes for fish curries and marinades.
