Black Gram (Vigna mungo), commonly known as Urad Dal, is one of the most highly prized pulses in India. It is sold whole (black) or split and skinned (white). The split white version is incredibly sticky and glutinous when ground, making it the essential fermenting base for South Indian Dosa and Idli batters. The whole black version is the star of the famous, rich Punjabi dish, Dal Makhani.
