Properties

Kabuli Chana (Cicer arietinum), or white chickpeas, are large, light-colored legumes with a smooth coat and a nutty, creamy texture when cooked. Unlike the smaller, darker Desi chana (Bengal gram), Kabuli chana holds its shape well during long simmers. It is the star ingredient of the iconic Punjabi dish Chole Bhature, where it absorbs the intense, tangy, and dark flavors of Anardana (pomegranate seeds) and Amla (gooseberry).
