Properties

Sichuan Pepper (Zanthoxylum bungeanum) is not a true pepper but the dried reddish-brown husk (pericarp) of a citrus family shrub. It is famous for producing a unique, tingling, mouth-numbing sensation (málà) rather than conventional heat. It features a bright, citrusy, and slightly piney aroma. An essential element of Chinese cuisine (especially in mapo tofu and hot pots), it pairs exceptionally well with chili peppers to balance intense heat.
