Sabudana is not a seed or grain; it is an industrially manufactured pearl made from the extracted starch of the Cassava root (Manihot esculenta). Because it contains no grain, it is the most popular carbohydrate consumed during Hindu religious fasts (Vrat/Upvas) where grains are forbidden. When soaked and cooked, it turns translucent, spongy, and chewy, famous for dishes like Sabudana Khichdi or crispy Sabudana Vada.
